CAVALA:
SCIENTIFIC NAME: Scomber japonicus
ENGLISH NAME: Chub mackerel
LENGTH: 15 - 30 cm on avg
CAVALA is normally at the top of our fish catch annual rank (in weight).
There are many dishes with CAVALA, and also canned products are very popular.
But CAVALA which is caught here in Algarve are mostly sent to Spain, and are used for the food
for the farmed TUNA.
JUDEU:
SCIENTIFIC NAME: Auxis rochei
ENGLISH NAME: Bullet tuna
LENGTH: 30 - 40 cm on avg
JUDEU is ranking among the top of our fish catch along with CAVALA.
Different from CAVALA which is caught almost throughout the year, JUDEU is caught in a particular season intensively, especially in summer. And most of them are sent to Spain as the raw material of the canned products. Canned bullet tunas are very popular in Andalusia, Spain.
SARDA:
SCIENTIFIC NAME: Scomber scombrus
ENGLISH NAME: Atlantic mackerel
LENGTH: 20 - 40 cm on avg
SARDA is one of the species of mackerel found on both sides of the North Atlantic Ocean.
It is distinguished easily from CAVALA easily by the pattern of each back.
Generally SARDA is more fatty than CAVALA, and the price is also higher than CAVALA.
SARRAJÃO:
SCIENTIFIC NAME: Sarda sarda
ENGLISH NAME: Atlantic mackerel
LENGTH: 50 - 70 cm on avg
SARRAJÃO is a large mackerel-like fish, which has the canine-like sharp tooth.
The color of the meat is lighter red compared with JUDEU,and it has more oiliness.
Good for SASHIMI, slices of raw fish, but is demanded for an attention because is deteriorated rapidly.
CORVINA:
SCIENTIFIC NAME: Argyrosomus regius
ENGLISH NAME: Meagre
LENGTH: 80 - 180cm on avg
Corvina is the biggest fish in the set net after bluefin tuna. Bigger ones reach about 180cm and are estimated to have around 50 years old more or less.
CORVINA is one of the most traditional fish in Algarve as well as Bluefin Tuna. Not only because of its bigger size, but also due to its nice taste, it’s a valuable fish, achiving high values on the market. As a long-established custom here, when fishermen catch CORVINA, they thank their fortune and manufacture an accessary with the ear stone of CORVINA.
CARAPAU:
SCIENTIFIC NAME: Trachurus trachurus
ENGLISH NAME: Atlantic horse mackerel
LENGTH: 15-30 cm on avg
Here in Portugal, we can catch three species of CARAPAU; CARAPAU, CARAPAU NEGRÃO (as follows) and CARAPAU DO MEDITERRÂNO (Mediterranean horse mackerel).
CARAPAU is one of the most popular fish here in Portugal. Usually fried, grilled and marinated.
